Pokemon GO & Chill?

I already hooked up with a girl who was sitting next to me at a bar watching the Euro final and playing the game....
So you guys actually see these things in normal life? As a non-player without a clue, I'd never see them, correct? Or could I see a pokeman because someone on the sidewalk is playing?

So I've got a question about gym battles... I don't think I can possibly be doing them right. I went to a local gym today and battled... I beat the first Pokemon, then it immediately put up against the next one and my guy got KO'd. Because... duh... I can't beat two strong pokemon back to back. Is there any way to "sub" pokemon like in the original game? Or run multiple so that when one dies the other goes? Or is it just going to literally be impossible for me to ever make progress?

My understanding is that you made the mistake of attacking a gym controlled by your own team (red / blue / yellow). I literally have no idea how this works and youtube is blocked at work so I'm just a racing mind right now. I am seeing some weird ISH online and am thoroughly confused.
