Losing your QB doesn't necessarily get you left out. It's losing a dominant, key player (usually a QB) whose loss has a drastic effect on your team's strength. You lose the guy your O revolves around - a Heisman candidate or 1st team All American - and his backup is a couple of levels down from him, then yeah. That's what happened to FSU last year. Without their star QB they weren't remotely close to being the same team. If Beck's out, though, not much really changes. He's just a serviceable, average QB and his backup is nearly as good. Georgia will still be more or less the same team without Beck if he can't play. If UT lost Ewers, I doubt they'd get left out. There four spots last year so apples to oranges. FSU squeaked by all year and lived off of Jordan Travis. GA has great D and great RBs. They win today with a backup who played better than Beck did.
