A great pancake tip...

fold in whipped egg whites to your batter. It'll add a nice, subtle sponge texture but not take away from the traditional fluffiness that make pancakes, pancakes. Ensure you add a bit of sugar to the egg white as your whip it, it'll help stabilize the protein better.

depending on the recipe yield... for every 120g of flour (generally equates to one cup) you want the whites from two large eggs. Be sure to lightly fold the egg white into the batter, you don't want to overmix it.

I think Moore gets rocked if they play against Miami DEs. We picked on our OLine when in fact they held up against the best front 4 in CFb. Of course they folded like a house of cards when it mattered but I blame Denbrock for shitty playcalling that last so called drive.

Using a spatula or wooden spoon, scrape the whipped egg whites on top of the batter. Take the spatula and pull batter from the bottom of the bowl over top of the egg whites, but do not stir. That motion - pulling from the bottom of the mixture up to the top without stirring - is folding. Repeat until the whites are incorporated. The batter will wind up mixed but still airy. If you stir, you’ll knock much more of the air out.

It's pretty good. I like it over Blue Plate.

Hellman's uses whole eggs, Dukes and Blue Plate only use yolks. Not a huge difference, sure, but detectable.
