Sorry but no.
A few days worth of practice with players you've never practiced or played with is not a quality indicator of how your talents will translate at the next level. In fact, it's one of the worst ways, and it's been often criticized by experts outside of the camp circuit. You are one of several QB's and the reps are severely limited. Obviously 247/Scout/Rivals guys aren't going to bad mouth their own camps, because they rely on those to help their site traffic and earn revenue.
Camps are a very VERY distant second to legitimate live game film, especially if you're like Jurkovec and you play against top quality competition. Fields plays in the 2nd highest class in Georgia, so the comp is definitely impressive, but Jurkovec plays in competition very comparable, if not superior in the highest class of PA. Lawrence plays in a lower class, and while certainly not bad, it's a step down compared to the comp Fields and Jurkovec play.
As for the film, yes I have seen all three, and I stand by my original statement that Jurkovec's is the superior film to the three. He isn't the polished mechanical master that Lawrence is as of yet, but unlike what you've stated, he's definitely on par with Fields in terms of athleticism. The film shows that. He also sees the field extremely well and shot puts the ball with quality precision. He also has total command of the system he plays in. He's a winner. Neither Lawrence or Fields were able to win state unlike Jurkovec.
There's a reason why the boys at ISD have PJ as a 5-star, and I sure as hell take their word over 247, who don't even have PJ ranked in the top 100, which is utterly ludicrous. Simply put, ISD from an unbiased perspective does their due diligence and their analysis is among the best in the biz.
Once again, Jurkovec is a 5-star level player and the film solidifies that claim. 247 used his Junior season injuries and the camp circuit as justification to devalue his immaculate senior film. At the end of the day, they can say what they want. As Col. posted, their track record on the evaluation of the QB position in the recent years makes it difficult to take their opinion as gospel.
