Smokers out. Going to be a good day.
Doing pulled pork nachos and pork belly tacos with mango salsa. And since it’s my anniversary, my wife will be enjoying a pork sword.

So we love Filipino adobo. Pretty much our main family meal but it’s always chicken adobo. Tonight I’m making some pork adobo,… we will see

First time homeowner here as of Wednesday this week. The number 1 thing I am excited about is the food possibilities in my backyard. Any recommendations for a smoker? Do I just jump right into a Traeger? I've seen these Green Eggs and Kamado Joes as well. I have no experience with these but really want to get into it. Does it matter which one I get as a beginner or is there one that is better for that?

Depends on how much time you want to spend on cooking. I have a an offset and a pellet smoker. I prefer the offset style but it takes constant management of the fire. I generally have to stoke or add wood to the fire every 45 minutes to an hour. The pellet smoker is nice simply for the time saving aspect. It essentially is set it and forget it.

I'd start with rabbit. Then maybe catch a squirrel and try your hand at that. I'd stay away from possum. I'll show myself out.

Yeah I was gonna go the pellet smoker route for now.

I currently have a BGE and have had pellet smokers in the past. I personally enjoy the live fire cooking more, but it took time to get there. When you're starting out, I'd recommend getting a pellet smoker primarily because of its convenience. There are plenty of quality pellet providers out there that provide a decent smoke flavoring.

Squirrel is best copped in a few pieces each and made just like buffalo wings. I usually do 3 squirrel per person and they are always a hit.

Now for rabbit, you can go several directions but smoking is not my go to.

If you want to wow people smoke some wild pheasant wrapped in bacon or tripe, if eaten immediately following cooking you can’t stuff enough in!

I was going to make a joke about catching pheasants in his back yard. Beautiful black pheasants. They go "Kakaw! Kakaw!"

Horrible of you. We can’t be letting these city folks know what amazing food lurks in their backyard.

More seriously, I’m an avid hunter. We love experimenting with how to serve it.

So a close college buddy is driving into town tonight for a weekend visit. Have a big pot of green chili bison chili slow cooking,… a big pot of smoked turkey mixed greens, a big batch of green chili cornbread and a churro cheesecake. Gonna be a hell of a south Texas feast

Made chicken gyros the other day with tzatziki. Defrosting a whole chicken with potatoes today. I do enjoy cooking.

I'll likely make a pizza from scratch over the weekend. Pesto, sliced tomatoes, pepp, snausage, scunions. Yum.

lol,… south west Texas somewhere near Mexico on some map once,… anyway aren’t you from Austin??
I spend a hell of a lot of time in South Texas and the denizens of that area want to fist fight about whether or not San Antonio is South Texas. I have no idea what they'd say to El Paso lol

Southwest Texas,… there. Anyway I’ll not have anyone from Austin pretending to tell people about Texas. 😂🤣
