Smokers out. Going to be a good day.
Doing pulled pork nachos and pork belly tacos with mango salsa. And since it’s my anniversary, my wife will be enjoying a pork sword.
Depends on how much time you want to spend on cooking. I have a an offset and a pellet smoker. I prefer the offset style but it takes constant management of the fire. I generally have to stoke or add wood to the fire every 45 minutes to an hour. The pellet smoker is nice simply for the time saving aspect. It essentially is set it and forget it.First time homeowner here as of Wednesday this week. The number 1 thing I am excited about is the food possibilities in my backyard. Any recommendations for a smoker? Do I just jump right into a Traeger? I've seen these Green Eggs and Kamado Joes as well. I have no experience with these but really want to get into it. Does it matter which one I get as a beginner or is there one that is better for that?
I'd start with rabbit. Then maybe catch a squirrel and try your hand at that. I'd stay away from possum. I'll show myself out.First time homeowner here as of Wednesday this week. I currently have a BGE and have had pellet smokers in the past. I personally enjoy the live fire cooking more, but it took time to get there. When you're starting out, I'd recommend getting a pellet smoker primarily because of its convenience. There are plenty of quality pellet providers out there that provide a decent smoke flavoring.Yeah I was gonna go the pellet smoker route for now.
Squirrel is best copped in a few pieces each and made just like buffalo wings. I usually do 3 squirrel per person and they are always a hit.I'd start with rabbit. Then maybe catch a squirrel and try your hand at that. I'd stay away from possum. I'll show myself out.

Now for rabbit, you can go several directions but smoking is not my go to.
If you want to wow people smoke some wild pheasant wrapped in bacon or tripe, if eaten immediately following cooking you can’t stuff enough in!
Horrible of you. We can’t be letting these city folks know what amazing food lurks in their backyard.I was going to make a joke about catching pheasants in his back yard. Lovely black pheasants. They go "Kakaw! Kakaw!"
