I bought a case of Troegs Mad Elf in 2015 and put it down the cellar to let it sit for some time. After a year, the harshness (not overly harsh though) mellowed and you could taste the honey and cherry. Continued letting them sit, pulling one or two out at random. Two nights ago I had one of the about eight I have left. Just over three years in the dark cool cellar, and it is still very tasty.

Last night, I'm drinking a Founder's Kentucky Breakfast Stout that I aged almost a year. It was delicious.

Meanwhile, my girl is drinking a bud light out of a can next to me, keeping it classy. She gets really pissed at me when I let the beer snob out, so I just kept my mouth shut.

How do you make yours? I made a grapefruit oleo saccharum that I'm using to flavor plain soda to great effect.

Honestly just tequila and grapefruit juice. I love both ingredients and tried to add soda water but it ended up diluting it too much. Maybe with your oleo it'd be good but I don't need the extra sugar.

I recently picked up the Sumggler's Cove book. If anyone likes cocktails and especially like tiki cocktails, I highly recommend it. Probably the best cocktail book I've ever read. Really great stories, and their method for how to label your rums based on type is worth the price of admission alone.
