Kinesiology was the #1 major by Michigan players by a huge margin in the mid 90s when I looked it up as a student.
As for NFL, show me the stats for % of five and four star recruits that ever touch an NFL roster and then cross reference by school to show where they get the highest probability of making the show relative to their recruiting ranking. Since everyone (both sides) only throw up anecdotal evidence it is hard for me to say we are better or worse than others in this respect. We don't cut 1/3rd of our recruiting class within two years which alone may account for the difference. I suspect the odds are quite long of making the NFL regardless of school and ranking and protecting your downside by getting a meaningful degree makes a difference to plenty of families out there who take the time to face reality.
Anecdotally, I don't think ND has developed talent until the last couple of years versus the previous 15 years. Under Weis, Willingham or Davie, Harrison Smith very likely would have fallen off the face of the earth (actually maybe not Davie in this case but definitely under Weis or Ty). In years past, Michael Floyd might have been kicked out of school instead of giving him a second chance.
Regardless of ND, what have BK and Longo done to send 2 and 3 stars pro previously? Floyd and Smith as first rounders are largely to their credit. How many TEs were rated higher than Eifert? We have a small sample size but from my perception (unqualified at that) we are as a whole more imposing physically.
