One of my best friends in high school (Meredith) married a guy (John) from Texas a few years back who is first generation Filipino. They live in our hometown about 4 blocks from me. She's pregnant with their second child, so his mom came up two weeks ago to help with everything until the end of October. I love when John's mom comes up for visits as she always makes dope authentic Filipino food.

ACamp, her lumpia is ridiculous. I joked with her Sunday that she needs to make 1000 just for me... she might just do it.

If the adobo has a broth left to it (everyone makes it different and some do it with a bare minimum sauce) then a bed of white rice, chicken on top with a ladle of broth for the rice to sop up and a good hot sauce all over it all (I go crystal). It’s amaze ballz

There was a Filipino food truck on the air force base i worked on. The dude was a white guy but his wife was Filipino, at least I presume she was. Food was terrific.

ACamp, you ever heard of Jollibee's, a Filipino fast food chain? I just read an article about the best fast food chicken in the US and it rated them very highly and said they were poised to take over the world with their chicken. Nearest one to you is probably Phoenix, but there are several back in CA.

I never even heard of it until I moved to Texas. Apparently there were a couple spots not too far from me in Cali as well. Oh well, I have been told it’s stupid good for fast food chicken

While we're on the subject of chicken, I'll share my recipe for fried chicken that everyone says is phenomenal and very juicy. It's double-battered and the inner layer of batter seems to seal in the juices. A little messy to make and some work, but worth it. I'm the world's biggest fan of fried chicken and this is the best I've ever eaten if I say so myself (and almost all my family and friends who've had it agree).

I use bone-in skinless pieces, but you can leave the skin on or use tenders if you want.

1. Wash the pieces and leave them wet.

2. VERY liberally coat the pieces with your favorite seasoning, such as Mrs. Dash or lemon pepper. Much of the flavor will cook out, so it's hard to over season them.

3. Dredge each piece in a mixture of flour and lots of black pepper.

4. Dip each piece in a bowl of beaten eggs.

5. Batter each piece in crushed Corn Flakes.

6. Fry until done.

The egg seems to seal the moisture in as well as hold the layer of Corn Flakes on and this is some seriously flavorful, juicy chicken with a ton of thick, crunchy crust. My oldest daughter always asks me to make this for her when she visits, and she calls it God's chicken.

Have had a big pork shoulder in the smoker since this morning,... just added some beans and gonna add a bacon wrapped pork loin in couple hours. Coleslaw ready to go for the pulled pork,... Tonight shall be glorious.

Came out great.

Plus my wife took the leftovers and made breakfast burritos with the pork. Eggs, hash browns, cheese and guacamole,... incredible

The ‘Financial Advisor‘ just picked up a CFB McDonald’s lunch while she was out,... got me the Spicy McChicken and the spicy chicken nuggets with the Mighty Hot Sauce.... I’m just being honest. I’ve never had any of these before and it was all very good, I’m,... impressed??

For being cheap I thought that and the spicy chicken sandwich were pretty damn good too. The nuggets are just their regular nuggets with spice but that sauce makes it interesting,... and those sandwiches are pretty freakin good honestly

Anyone else ever had Wing Daddy??? It’s like a Texas ( I think) Wing Stop,.... but much better imo. Their Cilantro Lime wings are amazing. That’s my plan for Thursday as I’m alone this week. Wife and kids visiting fam in East Texas and I just got promoted so couldn’t get away. Mother in law brought by bomb tamales today or else I’d have done Wing Daddy tonight.
