Let's grind some meat, season it and stuff it back into the same animals intestines. Who would have predicted this amazing discovery? I usually make about 200 lbs a year with elk, deer, moose and about 30% pork butt.

Bought "The Sausage Bible" by Rytek Kutas many years ago and it has served me well. I get a lot of visits from the neighbors when we fire up the smoker. Good stuff!

You come up this way sometime and I'll fix you up free of charge. Very illegal in Alberta to sell wild game or fish. I've read some Court Decisions where offenders were charged over $25K for violations.

Most of the stuff I do is fresh or smoked (with Prague Powder) so it still needs refrigeration. We had a good season last fall and I still have 2 elk and a mule buck in the freezer. Awesome meat. Cheers!

First time today. Made 10 pounds. Amazing. Like home made bread only meat! Think I will upgrade from meat grinder/stuffer to a stand alone stuffer. Made Bandiera-pork shoulder, pork belly, mozzarella and Romano cheese, basil and tomatoes. 10/10 would make again

Awesome and congratulations on your first time!! It's as much fun making it as it is eating the finished product. We have a great local Italian community so I have been fortunate to get a lot of pointers along the way. While I used to experiment with a lot of different seasonings and such (and still do to some extent) I have learned that the "less is more" approach is pretty good. Cheers!

My brother is apparently heavily considering moving to Charleston, SC. Normally I don't encourage him on these decisions, because they're made on a whim. However, I would like a reason to visit and get some shrimp & grits...

Johnnycakes=Ho Cakes???

Never heard of them referred to as "Johnny" but what you are describing is basically what I know as a Ho Cake... make those often and highly enjoy them...

Same shit. I make the cakes themselves savory but use real Vermont maple syrup.

Is real maple syrup one of those things you can't actually get out in the West, or is it just prohibitively expensive?

Yes and no-ish (I mean everything is overly expensive here)... I live very close to our mountain communities so it's fairly easy for me to get, tho I don't often... I'd be surprised if it's difficult or overly expensive throughout So Cal.

Honestly tho, when I make Scottish Oat Cakes or Ho Cakes I do jam or just butter... I'll have to try them with syrup some time.

I buy that shit by the gallon (literally). We put it in everything. Coffee, tea, baked beans, marinades, whatever.

Well I've never had fried grits, but I have had fried polenta, which I imagine is not too dissimilar and I would not consider them the same, though probably flavor-wise they are very close.

Also, idk, I don't really keep syrup at my place due to never needing it. I only use it when I go out someplace for brunch on Sundays, but when it's offered, I take it. I think the trendy thing around here is to somehow concoct your own, which seems like too much work really (though I did have bourbon maple syrup that was utterly fantastic). It may have even been with the Johnny Cakes

Would be nice to have the luxury of choosing where my syrup comes from. As it is, I'm just grateful I can get the real stuff for a reasonable price now. Growing up, there was nothing but maple-flavored corn syrup.

Oh yeah, I wasn't clear, when the "real stuff" is offered on the menu when I go out, I get it. It's normally not that much more, and I prefer it. But I don't keep any syrup at my house, real or fake, because I never use it there.

I'll hit you up for Cabot & the maple farm. The Magic Hat beers I've had have not been inspiring, why not get some Trillium or something?
