But when the world ends, and all of you who have scorned Skyline have eaten all of the other dried foods, canned meats, canned fruits, canned vegetables, and other non-perishable items… one man will stand above the rest, a veritable treasure trove of sustenance stockpiled at his fingertips.

That man will be me. That treasure trove will be various types of canned Skyline.

I had several Ouzo lemonades at the Panegyri Greek festival in Cincy this past weekend actually

(bypassed the chili booth and ordered a gyro, some Saganaki, and some spanakopita; got a Greek pizza on the way out when I was well lubricated)

I’m smoking 18 pounds of pulled pork tomorrow afternoon/ night for a family cookout on the 4th. Any of you boys have a good rub to get a really dark bark on the pork? I always struggle with the bark, I plan on giving it an apple juice bath every hour to help

I’m going to let it rest in my cooler over night after it’s finished and shred it Friday morning

Instead of apple juice to spritz I use a mixture of half apple cider vinegar and water. Also try doing it longer than every hour. I wrap it after I get the bark to my liking

I’m going to let it rest in my cooler over night after it’s finished and shred it Friday morning
So pulled pork is one of my things for sure,… 18pounds is a good chunk… so, a light layer of mustard to bind and then all of these in good amounts, in order of greatest amount: brown sugar, salt, pepper, garlic powder, paprika,… make a lot for 18 pounds and coat generously,… so, again, with that much meat you’ll need a large amount rub. Anyway I smoke mine at 225 and I go long, longer than most recommend, all night plus some, 15 hours at least. I’ve honestly gone longer. I do spray with apple cider vinegar every few hours and if you want to wrap I’d do it past the halfway point if you want bark. The longer you wrap the less bark you’ll have. I’d wrap at about the 8-10 hour mark,… spray the shit out of it before closing it tightly and then another 5 hours or so…

I also make a homemade vinager sauce to put over when serving, brown sugar, apple cider vinegar, ketchup, crushed red,… shake well. Makes for a great Carolina style sandwich

Not really, I let it rest before pulling but only like five- ten minutes or so.

Good luck, hope it helps.

Here’s the exact vinegar sauce recipe, it’s not my original, I found it over the years. This is the serving sauce, not the spray, the spray can be just apple cider vinegar.


  • 1 Cup White Vinegar
  • 1/4 Cup Ketchup
  • 1/4 Cup Apple Cider
  • 1 1/4 teaspoon Crystal Hot sauce
  • 1/2 cup Brown Sugar
  • 2 teaspoons Salt
  • 1 1/4 teaspoons Crushed Red Pepper
  • 1 teaspoon Black Pepper
