Hardly the same. Mrs. Wilkes' is a M-F, lunch-only, "momma's kitchen" fried chicken place. Hall's is a pay-out-your-ears steakhouse.

Sorry, I mistakenly thought we were talking about all southern style breakfast food. The Gospel Brunch at Hall's is unreal.

Their dinner is incredible too though. Far superior to your typical east coast or Chicagoland expensive steakhouse.

I don't know if I "get" steakhouses. If you have a local butcher and/or farm, you can get the same quality beef and cook it yourself for less than 1/4 the price. A good steak doesn't need anything more than salt, pepper, and a good hot sear.

Obvious bias here but the culinary experience in CHAS is unrivaled in the south. Not even close. From Soul food, seafood, whatever.

I don't know if I "get" steakhouses. If you have a local butcher and/or farm, you can get the same quality beef and cook it yourself for less than 1/4 the price. A good steak doesn't need anything more than salt, pepper, and a good hot sear.

Well the experience, service, alcohol, and other food more that adds to eating a steak at home. I will gladly pay $35 for a Tomahawk

Red beans and Rice... Collard Greens... Pepper Jack and Green Chile South West style Grits... Cornbread... Smoked ribs... I can do those with the best of them... Love a good hot link...

Free association... cajun... andouille... sausage! What a miraculous food... Portuguese chourico is my personal favorite, having grown up on the Portuguese capital of the US (Rhode Island).

Anyone have experience with goose breast? I have about 12 Canada Goose breasts that I need to cook but not sure how.
Roasted with poultry herbs would be safe but delicious. I'd recommend confit if you had the legs, but it's not as effective with the breast.

Love Dirty Rice and i make a pretty mean Jambalaya... but honestly, beyond that i haven't dipped too far into Cajun... Not a huge Crawfish or shrimp guy so that kills a lot of it.

I do love Cajun seafood joints though, the ones that also serve fish, lobster and crab with corn on the cob and sausage and all the Cajun seasonings, throw it all together in a giant bag or bucket ... those are good eats.

Only way I've ever eaten CG and was able to tolerate it was by putting it in a slow cooker and preparing it like pulled pork with lots a bbq sauce. The other alternative is to turn it into jerky. Also merinating it in 7up seems to help take away some of the gamey taste.

Be careful with that... if you leave it in the slow cooker too long you can actually take the bones way too far and you'll end up with little shards of bone shrapnel in your meat.

The interior of that place, and the serving style, reminds me of the Apple Barn in Gatlinburg, TN. I love that place.
The experience is entirely dependent on who you sit with. Best case scenario is you're lucky enough to get a FANTASTICALLY southern bunch of people at your table who say things like "ooooh child," and "lawdy lawdy," and "bless your heart."
