We go in as a family and buy a side every couple years. Get the steaks, roasts, burger patties, and ground beef. Looking to do the same with a hog this year too for pork, sausages, bacon, etc.

Smoked turkey is good enough. This year though I’m hoping to go smoked rib roast and Thai smoked game hens, with mustard greens, stuffing, cornbread, my wife’s garlic mashed potatoes, homemade pumpkin and apple pies and some lumpia because lumpia is never wrong.

Of course I’ve bought almost none of the needed ingredients for any of this yet so,… I’m living a bit dangerously. We have frozen lumpia left over from our last lumpia making venture,… so at least there’s that.

Make sure you coat that roast with an herb butter before smoking. I do one every year for Christmas.
Everyone loves it.
While we’re at it, could someone talk about Goetta. I had it in Cincy and have never seen it anywhere else.
