I think a cast iron skillet is a must have. I use it for everything. Mine is also about 120 years old. I have not had any problems maintaining it. Rust can be bad but its not hard to repair. I make deep dish pizzas with my cast iron skillet as well. nom nom nom nom

So where do I fine one of these 120 year old cast iron skillets.

Try an antique store or flea market. My dad has a collection of 45 of them ranging in size some are flat or pans. Some have ridges to make grill marks. They are truly amazing. I have 3 in my collection.

Cast Iron belongs in every kitchen no matter how complete or contemporary.

Is there an aluminum/tin foil/en papillote conspiracy in play?

"Deep Dish" is not pizza, regardless of whatever spice and frilly meaningless doo-dads are attached.

The Second City has much to their cuisine credit. Time to step out and stop shirt-sleeving your big brother.

I gots no problems with human beans. I gots no problems with "deep dish" stews, soups, ragouts and fondues.

Pizza, by design, definition and destiny has nothing whatsoever with deep and dish.

If deep dish is pizza then a polish on a french roll is a hot dog. I agree dshans, two different items.

Like most culinary delights do, and especially in America due to its need to adapt, pizza has evolved from its primitive ancestors. I love a good Neopolitan as much as the next guy, which was even once just Phoneician flatbread with oil.

Chicagoans have added their particular flair to it in girth and method of preparation but for perspective, when I was in Italy, I could not find a pepperoni to save my life.

All in all its still a piece of "Pie" no matter how you slice it.

As much as I love a good Chicago deep dish, Chicago thin crust cut in squares > deep dish.

Edit: I enjoy deep dish, thin crust, pan, Sicilian and Neapolitan pizza. It just depends on the mood. Just as what toppings I want changes, sometimes it is cheese or pepperoni, sometimes it is olives, peppers and mushrooms, etc.

My wife will only eat thin crust. It's the only pizza she will ever eat. She says the rest are too "doughy". Maybe the rest of us want a pan? Or maybe a deep dish? But no, it must be thin crust for her. This is why I have been married for 21 years...thin crust pizza.

I have a friend like that too, though she's a diet nut so I've always just assumed its the carbs she's really worried about,..

Real pizza gets it's pizazz from flavor, not puking every topping in the cupboard on it. Spices, oils and quality of ingredients should trump using a bunch of ingredients to make a cheese-sausage soup bowl.

Nobody in Chicago eats deep dish unless their strange cousin from Kalamazoo is in town. It's the equivalent of asking someone from Orlando if they go to DisneyWorld. It's for tourists, not locals There is a saying among Sox fans that goes... there's only 2 places in town where there are no Chicagoans... Gino's East and Wrigley Field.

Most likely.

Pizza is a facirite, if not the top, choice of food for me. I don't do deep dish. I prefer thinner crust. Give me quality topping with a good sauce, dough, and cheese any day of the week over a trash can pizza.

Deep dish pizza isn't even pizza. It's Italian Style Pie. Filled with anything to make you forget that you're actually eating pizza. Do you order cheese whiz on yours? Don't get mad at us for pointing out your kool-aid lip stained slices of Chuck-E-Cheese pie.
