That's because we failed the attempt. If we kicked the extra point and Pitt scored again, then we failed THAT two point conversion, we'd be in the same situation.

That has nothing to do with WHEN you go for 2. If we kicked it, down 1. Pitt scores, down 8. It's still a two possession game if we fail to convert THAT two point conversion, only at that point it's later in the game and we have less chance to hurry up.

The point is you may never need to get a 2 pt conversion depending on how the rest of the game goes. However if you don't convert you are opening the door to being down 2 possessions which is a terrible position to be in. The reward isn't worth the risk with over a quarter to go.
