Wife is making gnocchi Mac and cheese with bacon. And me and the kids have permission to eat on the couch while we watch football 😃
MiL got us really nice TV trays for Christmas. Def using them today

We have tv trays…but we also have an open concept floor plan where our main tv on our main level is visible from our dining room table. So it sort of defeats their purpose lol.

My step MIL made a jambalaya this weekend. She’s an absolutely phenomenal cook. She and my FIL spent three years in Louisiana post Katrina due to his job and she picked up a ton of authentic Cajun and creole recipes and they’re my favorite thing anyone makes. I’ve never been to New Orleans so I can’t compare to what it *should* taste like, but I’ve found her cooking to be compatible with Cajun spots I’ve hit in other travels.

I’ve never had it ( I’ve eaten at Taco Bell maybe three times in my entire adult life) but I’m not gonna lie. It looks good.

I’m assuming it’s actually really small but like five bucks???
I think the problem is you've had a low sample size with Taco Bell and the location(s) you've been to aren't good. You've been missing out for all these years!

Nice, Cajun food is my favorite. I've got a great recipe for Jambalaya I got out of a magazine years ago. Haven't made it in a while, but you've got me thinking it's time.

We had TV trays when I was a youngster. Didn't know they still made them. lol

Cajun cooking has always been about taking a few very basic rules (holy trinity aromatic base; first, you make a roux; spicy-not-hot; when in doubt, make rice; also when in doubt, make something that goes over rice) and adding to those rules whatever you have available and whatever makes you happy. "True" cajun seasoning is very simple (loads of garlic and onion powder, a good bit of paprika, a bit of cayenne, salt and pepper, and dried parsley), and part of its magic is it's well-suited to taking on a very wide range of additional spices. Most of those pre-fab cajun spice mixes (like Tony Chacere's) are just that blend plus oregano and thyme and powdered versions of the trinity. At the end of the day, if she's roughly following those basic rules, anyone telling her she's not making Cajun food just because it isn't their version of the recipe has missed the point of Cajun cuisine.

Of course, making not-gumbo and posting it to social media captioned as "gumbo" has caused a number of small wars, so do avoid that.

Mexican has the same thing going on. Mex is regional like BBQ so there will be variations all under the scope of 'authentic' but try telling that to some lady who thinks her grandmother invented Mexican food on social media. I'm not sure I've seen a more toxic non-political topic on SM than "Here's my Mexican food" posts.

Chicken sandwich is good but I dislike that you can’t get it with a slice of cheese. Popeyes also discontinued their red beans and rice around my way.

You can get a slice of cheese on it,… in fact their bbq one comes with cheese by default.

I’d be nuts about the red beans and rice

Was in the Charlotte airport yesterday and wanted to try Bojangles. They were out of most things and the chicken tenders they ended up recommending weren’t even on the menu? I’d try it again but what a sad representation

It’s been awhile so could be wrong by now...maybe 6 or 7 months. I’m going to have to go tomorrow just to double check for you.

El Paso has to be the most disappointing food spot I’ve been. Been twice with big expectations that were average. I can find a Mexican restaurant on every corner in Indy better than El Paso. And literally, they are everywhere

EP has good Mexican but it is very hit or miss for the southwest. I have some spots for you when you come back. Def miss west coast Mexican for its consistency at least, and the burritos.Do you remember where you’ve been out here?

I've rioted for less.

My wife is the same way, I don't get it. Beans aren't my bag, but she always makes me buy an extra side so she can have the red beans and rice. They haven't discontinued ours yet..I can only pray.

I’m guessing near downtown?? Anyway EP is a good food city but it is hit or miss and more hit on things you wouldn’t expect. The Mexican is really good at the good spots but there’s so many bad spots for a city known for Mexican that I’d say it misses on that. The Pho and Ramen joints, steakhouses, pizza, and gastro pubs are all much better than I expected. There’s no Korean out here at all tho… so it depends on what you’re looking for.

Friday night the wife and I went to legendary St Elmo's for our 50th. She had the Ribeye, I got the NY Strip. I'm not a big steak guy, but damn that was good. Of course we had the word famous Shrimp Cocktail. That sauce opened my sinuses in about 3 seconds and they weren't in need of opening. lol

Making some honey butter chicken biscuits tonight for dinner. Have the chicken marinating in buttermilk since last night. Made buttermilk biscuits last night as well. Should be delightful.
