Yeah but that was 3A. Here’s the kicker with my entry - we bumped to 4A those two years - graduate, then they followed up with 3 State 3A champs in a row. I was literally that one person who split classes.

Didn’t matter, at first, as we were still 4As #1 both years. Just couldn’t beat Avon, who is one of 5A’s best. Lost senior year 10-7. I hate calling out the dude who’s hold lost that game because he’s an Indy hero now - RIP.

3-0 against Cathedral on a football field

3-1 against Cathedral on the baseball field with 3 bombs.

I’m sure you can appreciate that.

Yup always good to beat those guys. I have family that plays there now, so I have to cheer for them kinda. HS FB was a bit different in my day though. A lot of the 4A and some 5A were 3A back then, and we also had our way with the up class too. My generation was the first to win it all. I think most of the D and rushing records are still from those days. Our coach at that time was a complete xxx.. Has the highest win% of any coach there, so I guess I can't complain too much. We had a few kids almost kick the bucket during two a days. People thought Bob Knight was tough lol..

It was extra special to me growing up/playing with most of them. WC was prime recruiting ground for Cathedral back then and they already weren't fond with me splitting time with CYO. My dad was the CYO coach, hard to say no.

Our sectional was #1) us, #3) Avon, #4) Cathedral and #6) Brownsburg - I don't want to hear it, but thank you for paving the way. Two years in a row. Playing up.... Came down the following year - runs off three in a row like a kid eating tic tacs.

So you did or didn't play for Bruce? Our offense was run it behind me and Crunch.

Mom's getting ready for her race day party. She's about 5 minutes from the track. I'm sure she'll have a couple crock pots of pulled pork and mac & cheese ruined with jalapenos. :) I was going to fly down this year but decided to take the first week of March off of work instead.

Made chili colorado yesterday...which was almost indistinguishable to my chili con carne from Saturday lol.

Also, I made pozole for lunch yesterday since I had the day off and my buddy comes home for lunch. Def was good, though I need to add more liquid as it's always incredibly thick.

I smiled,... hopefully it was still good though.

I've made these steak and veggie foils a few times over the past few weeks and will do so again tonight. Everyone gets to pick and choose what they want and then we slather each foil in garlic herb butter and cook for about 40 minutes... comes out very good though I think I'm gonna add the steak mid way through today as the meat comes out too well done for my tastes.

Tomorrow and the rest of the week will be Vegas so I'm def getting:

good breakfast buffet (I'm a sucker for decent buffet eggs, bacon and corned beef hash) and a nice bison burger from The Burger Bar at Mandalay, beyond that it'll be going with the flow.

I just had the spicy Popeyes sandwich legit (no mistakes this time) with a side of red beans and rice. Seven bucks for the combo. If there’s a better combo in all of fast food I’d love to have it. This sandwich is pretty damn good man. Idk if it’s worth dominating 2019 but for fast food it’s crazy good. And Popeyes red beans and rice remain my fav side from any fast food joint. Gonna have to do this again soon

Haven’t had but will try it now. Shucks, and I just had chic-fil-e for lunch today too and they’re right next to Popeyes.

Popeyes red beans and rice isn't just good for fast food, it's restaurant quality. It's approaching the ideal version of the dish.

Might be worth noting... I had the sandwich before but my daughter ordered the regular (non spicy) and accidentally ate mine before we knew what happened. I got stuck with her regular without the spice. It was a pretty average sandwich. If you are the type that can't handle heat and would go with the regular, it's good but nothing to write home about. The spicy is the sandwich that broke the internet, I'm convinced. It's much better.

Try their blackened chicken strips with the the blackened ranch dipping sauce. Very good. Their cajun rice is also legit.

Had Chile Lime Tilapia last night. Came frozen from Kroger's. Not bad for frozen and doesn't take long to bake.

There is a catfish spot on the east side of town,.. super run down, bad part of town but damn.... this is legit the best catfish and hush-puppies I've had maybe ever... planning on hitting it up again Friday. so good....

Made picanha for the 1st time this past weekend. Prepared and cooked it "Brazilian style" with a dry-brine. Came out amazeballs. Followed Guga's recipe:

Looks great Pio!

Had rib eye and veggie tin foils last night with loaded baked potatoes on the side. Very good. Wife is working from home so she’s handling most of the meals the next two weeks. Which is great because I usually home first which means I usually do the in week cooking. Sounds like green enchiladas and homemade salsa tonight. She’s a good cook.

Did this again,... so good. Also when you consider other fast food joints have combos for a pretty garbage burger and fries for 9 bucks or more this at 7 dollars is incredible.

Did the pancit thing with 1 spicy and 1 regular. At first taste, I wasn't sure what the big deal was. Then about halfway through the plate, it hit me. Damn delicious. Now wishing I had way more

It’s my daughters bday and she asked for chicken adobo (her fav) but get this,.... We actually found my father in law’s mother’s recipe for adobo over the weekend, gonna try it tonight:

Chicken AND pork together
1/2 cup vinegar
1/2 cup soy sauce
1/2 sherry
Diced jalapeño
Onions and garlic,...

Boil lightly for 20 minutes. I’ve done pork adobo a few times but never with chicken at the same time and the amount of liquid seams very little to me, we usually submerge the chicken completely in a 60/40 vinegar to soy mix. The sherry is new too,... interested in how this comes out. I mean she’s the Filipino so she knew what she was doing. She was apparently a famous actress over there and came here to escape the trappings of fame with her children ( my father in law),... crazy. She came to America to AVOID fame and fortune.

Oh I haven't done a specific recipe yet. I just took those instant pancit packets like you recommended and mixed them.

OH!!! My bad,... dude yeah for instant I think they are really good. Especially with a bit of my fav hot sauce mixed in

All this talk about Popeyes and we just had one open about 4 weeks ago. I will admit, I didn't get the whole red beans and rice thing. To be it sounded pretty bland. Ordered the spicy chicken and the rb&r side.

I get it!

The chicken was excellent but I think I could order the red beans and rice every day! I looked at some "copycat" recipes and will be giving them a try if the stores ever get restocked on the dried red beans.

I’ve tried a few copy cat Popeyes rbr recipes myself,.... none that I’ve tried match it thus far,... I’ll keep trying. I like to think I’m a pretty decent cook but I’ve yet to perfect a rbr recipe, or steal one, that I’d stand on.

So, jarred salsa go-tos??? There is a store bought brand out of Albuquerque called ‘Sadies’ that is legit good... store bought or no store bought. Anyone else try it?? Any other good recommendations?
