Scored a 4.5 quart stone bean pot on black Friday yesterday. The normal size for a New England bean pot is 2.5 quarts but this thing makes a whole mess o' beans. Molasses, brown sugar, bacon, onions, and mustard going in with two dry pounds of navy beans, soaked overnight and simmered to tender. They'll spend about 3 1/2 hours in the bean pot low and slow. I'll post a picture when done.
I taught myself how to make poached eggs today. So slightly overdone poached eggs, English muffin and Mornay sauce. I was too chickenshit to try Hollandaise the same day.

Yeah my brief sojourn into back of house life taught me a lot. I didn't get to learn everything or even as much as I wanted to learn. However I learned how little I knew and am trying to improve my feeble knowledge.I know that feeling all too well. I only ever got good at them because I worked with a chef who made me make all the base sauces every day for a few months for the kitchens daily prep. Bouillabaisse is my fav but it was always difficult for me.
