Kroger sushi is what got us hooked.

I didn't like sushi until two weeks ago when I had a crunchy roll from Kroger. I think it had caramelized onions or something on top and a sauce drizzled over it that was almost like BBQ and soy put together. Imitation crab inside I think. I enjoyed it thoroughly, so then I tried a California roll, which was decent.

Mrs. GO IRISH!!! and I make our own sushi and sashimi quite often. We have the good fortune of having a really high quality Japanese market very close to our house that has fish already prepared and ready to eat raw.

Don't get caught up with "sushi grade" and "sashimi grade". It is a complete marketing ploy. There is no governing body to set regulations or standards for sushi other than FDA recommendations for consuming raw foods. The different seafood distributors will set their own standards for "sushi grade" or "sashimi grade".

Farmed salmon is the safest, but if you are unsure, freezing it is the way to go.

The freshness of the fish is also going to greatly affect the flavor of your sushi. We are spoiled here in California because those of us that go deep sea fishing frequently tend to become fish snobs.

I was recently out on a trip for some Yellowtail and there is nothing like bringing up a big fish, cutting the fillets right there on the boat, squeezing a little lemon over it and eating your fill along with a few cold Coronas. Really changes your perception of the stuff in the store.

I see a lot of people mentioning that farmed salmon is the safest because of lack of worms. That being said, farmed salmon is one of the dirtiest types of food out there. Raised in pens surrounded by their own waste. You may have to look out for worms in wild fish, but you don't have to worry about growth hormones, artificial coloring, pesticides, GMO's, etc.

Also, farmed salmon is decimating wild stocks. So as a fly fisherman, I don't eat it.

To each their own, but I don't buy that farmed salmon is better in any other way than costs.

True wasabi is hard to come by in the states. Horseradish is a wimpy-ass "poor" cousin that grows in the US. I have some flourishing in my side yard. It's a tough cookie.

I intend to harvest some soon – when the snow and frost finally get the fuck outta town. I'll send you some (COD) if you want.

I came here to say this. All Atlantic Salmon is farmed, no way I would ever eat that dirty stuff raw. If you can afford it, you're much better getting some Wild Alaskan Coho, sockeye, etc. Much better color, texture, and flavor. I'm am not sure what they use for most Salmon roll types though.
