A couple episodes ago on Mountain Men, that Tom Oar dude in Montana was making a stone knife (I forget what kind of rock he ended up using). It was pretty cool. He claimed the stone knife was better for skinning animals and such. I'm not much of a hunter myself. Is this true? His end product looked pretty small-- handle and blade. Seemed hard for me to believe that at least that particular knife would be better than a store-bought steel blade.

Honestly don't know. I'm sure a professional knapper could create a pretty kick ass (sharper than shit) obsidian blade for skinning. That would be extremely brittle though and need tons of repair. Give me a 4-5" big belly fixed blade in CPM S30V any day over that. I would make mincemeat out of several elk in the time he is taking to reprofile his stone knife.

Please don't listen to Hog. Never buy from retailers. Do your due diligence and buy online, either eBay or from a dealer like knifecenter.com or bladehq.com. Most have free shipping and you'll save a ton.

Lol! You could say the same thing about any product-- don't buy from retailers and due your diligence and buy online.

But, personally, I find that I don't have time to research every product and always find the best deal, nor have a strong enough interest level. So I buy from retailers sometimes. If there isn't a Williams-Sonoma within 100 miles from you, then the advantage of location and service from a place like that isn't of much use. Buying online (used and new) may be better for you.

I am helped by the fact that I have a sister-in-law who sells products to places like WS, so I can usually get quality cooking ware at great prices.

I would be interested in this as well. Need to upgrade my kitchen cutlery, and while I know a quality carry knife steel I'm not sure how that translates to the kitchen.

Carbon steel is the best, though you have to make sure it doesn't rust. It sharpens easy and is super high quality. Stainless is ok. Forged rather than stamped is preferred as it's a stronger blade. Full tang with quality handle material. You have to handle knives from different countries to find the type you like. They are pretty different. I prefer German vs. Fench/American/Japanese because they are a bit wider blade and feel more solid. French would be #2. Some good brands:

German:
Wusthoff (not the cheapos they sell some places. I mean the classics)
Messermeister
Some of the high end Henckels

French:
Sabatier- Tres Elephants, K

Japanese:
Global
Shun

American:
MAC


I would buy a Chinese cleaver from Chinatown for $20. They work just fine.

My wife is excellent at the Tachiwari cut but her specialty is the Shimotatewari.

I own a set of CutCo too but I am wondering what is better out there. They are good, but I really don't enjoy the handle grips of the set I have.

Wusthof is excellent for kitchen cutlery. Sold at a fine retailer near you...


They would blow Cutco out of the water.

I don't know shit about knives... but I do have one that I carry at almost all times, and I care about deeply. It's a Kershaw Leek, like this:

Leek! I'm not a huge AO guy but the leek is a fantastic blade. Ken Onion is a great designer.

I won't lie, the AO makes me feel like a badass every time I get it out and open it in front of my coworkers at a job I do on the side.

I do a fair bit of cooking myself, and I'm very partial to Wüsthof and Victorinox.

Retailers are great for "trying things on", but IMO that's about it.

You just got me excited. I got a badass Spyderco pocket knife when I turned 21. Loved that knife. Now I must own a Spyderco kitchen set. Nothing wrong with my Wustoffs, but I love a Spyderco in my hands.

Man! How did I miss this one! Here's my current EDC. I had a Spyderco Delica before this but the clip broke off and the knife fell out of my pocket. I wanted an excuse to by a bigger folder anyway.

I have an ESEE 6 on my wedding registry I want that blade so bad.

I tried to rep you and ask about the benchmade, but hit enter before getting my question out, is that a modified Grip or a Sequel? Didn't know the Seq came in black if that's what it is. Thumbs up.

Delica FFG one of my all time favorite EDC by the way.

Delica FFG one of my all time favorite EDC by the way.

I bet I'll get it for the wedding. I have some good buddies that are into the same shit as me so I'm hoping they pick it up.

The Grip isn't modified at all. It's an OD green grip with black blade. I love it though. My only gripe is that the blade needs tightened every once in a while and that it's not FFG. I know I can put some Loctite blue in there, but I just keep forgetting. Here's a link to the one I got and the store I shop around out.

Do you sharpen yourself? I am working with a Lansky kit but really want to work into a Spyderco Sharpsmaker. You used one?
