Bought some jalapeno & bacon jelly. Great on toast. Going to put it on a burger next.

Had Spicy Cajun Chicken Alfredo for dinner. Made it from Hello Fresh. Wife has been buying Hello Fresh off and on for a couple of years. Most recipes are pretty good. For the ones we like, we keep the ingredient/prep card and buy the ingredients from the store the next time we want to make one. Also found out that if you stop buying, they give you some pretty decent deals to reorder.

We've done Hello Fresh twice. We liked it. Just don't like the portions. It's too much to bump up to the 4 person, price wise, but for two person it leaves no leftovers. Like you, though, we've kept the recipe cards and just up the portions.

Our youngest son and wife were supposed to come home for Christmas, so the wife ordered a bunch of Hello Fresh. He called last night to say he's got COVID and stuck in Chicago, while his wife is home in Ft. Lauderdale. Stop by, we'll have leftovers. lol

To taste? Or how much of each. Looks like a great recipe. My girlfriend and I have been on a soup kick this fall and winter.

I add both during the cook to the entire pot,… but I still kind of do it to taste

Made fried chicken strips with the new air fryer last night. First time using it. I was a little skeptical, but it turned out pretty good.

Making a big pot of tortilla soup for tomorrow

I made some today as I had all the fixings for it but am not too happy with how it turned out. Do you have a recipe for this?

Also I'm guessing your Mexican Cornbread Casserole dish is very similar to what my family and I call skillet tamale pie. Basically ground beef and beans topped with cornbread and baked? Spices included of course.

Yeah kind of but with taco seasoning green Chile and onions added as well. I’ll def get you a good soup recipe. Stay tuned

Ham and beans with a side of cornbread tonight. Started it in the slow cooker in the morning. First time we’ve had this in about 10 years. Two bowls and now I’m paying the piper. Lol

Care to share the Mexican cornbread casserole recipe?

The ground beef onions and such is what you make of it,… I use taco seasoning and green Chile. Cook it through and put it in the bottom of the dish. With a layer of cheese over it then corn bread over that. Baked at 350 for about 20 minutes.

the cornbread topping is my base corn bread,…

-1 cup corn meal (never use that pre mixed bullshit)
-1cup flour
-1cup sugar
-teaspoon baking powder
-couple dashes of salt

mix that all together, set aside

-1 cup buttermilk
-2 eggs
mix that together in another bowl

1 whole stick of butter, melted in a skillet. Let cool and add the other two bowls and mix until it’s all mixed together and consistent. Pour it evenly over the meat and cheese and bake. In 20 minutes it’s done. It you JUST make the cornbread you can transfer it to a non stick sprayed baking dish and again, 20 minutes. My cornbread is the best

Made homemade egg plant parmesan last night. Kind of labor intensive prepping, but turned out pretty good. Wife liked it. She usually doesn't like anything I make. lol

Had adobo and fried rice tonight to celebrate my acquiring of some mama sita’s labuyo hot pepper sauce. It’s super hard to find in the states but I saw it on Amazon for 8 bucks and even tho it’s only a lil Tabasco bottle size wise that’s a great price compared to what it usually is.

I love adobo. My wife’s fried rice is the best. Both were so much better with this hot sauce. I’m happy… until it runs out like next week lol

Filipino food in general man,… huge extra benefit to marrying who I did.

The gf is Italian so pasta Sundays is a thing. Been making up a storm of sauces, including Bolognese, Genovese, her family's meatball gravy, a basic Mornay for ravioli, and this past weekend an oxtail ragu. Gotta say the oxtail was by far my favorite, but apparently a bunch of tiny pieces of the bone broke off in the ragu, bad stuff.

Really wish we had a few more weeks of chilly weather down here because I've got more oxtail, a whole chuck roast, and have been itching to make pozole for months.

Jamaican Oxtail stew this past weekend. Turned out pretty decent, next time I’m gonna add flank steak or something for a bit more meat.

Brah!!!! I was showing my father in law the mama Sitas hot sauce on Amazon and they had it on clearence for 2 dollars each,… we went halves and bought all 20 bottles they had in stock,… hyped
