That's basically my chili recipe except I use half kidney, half pinto. Ten jalepenos. Ground beef or steak depending on how fancy I'm feeling. Corn to cut the spice if the jalepenos are particularly potent.

If I put 10 jalapenos in my chili my wife would shoot me and then my oldest would kick me.

Since it was cold here the first couple of days this week, I made beef stew (with beer), chili, and chicken and wild rice soup. Tonight it will be tacos.

I used Miller High Life. I saw a recipe somewhere that used beer instead of wine and I thought that it would be interesting to try, so I made my usual beef stew and subbed out the wine for beer and it came out very good. My wife liked it more with the beer than with the wine, while I probably have a slight preference for the wine version.

If you get the ribs and the seeds out, it's not that bad.

Honestly, I make a salsa that would apparently put ptk in the ground...

-thee/four tomatoes
-10 or so serrano peppers (not cored or anything)
-1-2 hatch green chiles
-little garlic
-little lime juice
-little diced onion (optional)
-little salt

roast the first three, blend, add the rest... it's SO good but it's lethal hot for those who aren't spicy food nuts like myself.

Not me, my wife. She can't stand spicy food. I love spicy food (well my taste buds do, as I get older my stomach likes it less).

My wife loves mild salsa (even medium is too hot for her).

ETA: Though before we had children she was a little bit better about spicy food.

I love spicy food (well my taste buds do, as I get older my stomach likes it less)..

Truth, I'm starting to get there myself, just in the last year or so, I can't have a bunch of spicy food day after day... I have to spread it out now. I dread the day where I just can't handle spice at all anymore.

Just adding to this, if you rinse the insides of the chile with cold water, it can take some of the heat away. Another way is blanching them in boiling water for 30 seconds.

Just made some buffalo chicken dip.

8 ounces of cut up chicken
.6 cups of your favorite hot/wing sauce
One thing of cream cheese
.3 cups of blue cheese dressing
Sprinkle in some crumbly blue cheese
Red pepper
.5 cups of ground cheddar

Bake for 20 mins at 400.

Profit

Tonight steak (sirloin, my wife doesn't like ribeye or new york strip) with sauteed mushrooms, caramelized onions and roasted asparagus.

Tonight I made Chilaquiles with tomatillo salsa and Mexican cornbread... All in cast iron... Very good.

I tried my hand at picadillo this week. I really need to start writing down my ingredients list before I go to the grocery store...it was still alright though.

Eggs Benny today. I do love me some hollandaise. I'm trying to keep a little bit for tonight's asparagus (I hope that it doesn't separate).
