Made a dish tonight of roasted sweet potatoes, black beans, sauteed red peppers and onions and roasted chicken thighs.

Got a really nice bottle of olive oil and balsamic vinegar as a gift. Made a caprice salad that was one of the best things I've eaten in recent memory. Can't beat tomato, mozzarella and basil.

Grilled chicken for 60 today for an employee xmas party -- marinade chicken breasts overnight with Kens Steak House Caesar dressing. Solid easy way to cook for a crowd. Easy and tasty.

Wife and I made a pot roast with a pepper stout (Guiness) gravy and a pumpkin cheesecake topped with candied ginger and a homemade whipped cream.

I'm back on the low-carb train and tomorrow's date night, so I'm making garlic and herb goat/cream cheese stuffed Peppadew peppers drizzled with balsamic glaze as an appetizer, Philly Cheesesteak style stuffed Green Peppers for an entree, and healthy oatmeal chocolate chip cookies for dessert.

I made him grilled blackened salmon (with a homemade cajun rub) and roasted broccoli with bacon Saturday night.

Pinterest is my best friend, you guys.

After taking a month off from diet, and a spotty month of working out,,, back on the health track......

just brewed up a fresh raspberry + blueberry + banana + + strawberry greek yogurt + EAS protein drink shake/smoothie. put pinto beans and cubed hamsteak in the crock pot, put 10 chicken breast in marinade, and a bag of broccoli in the steamer.... gonna miss all that holiday food. off to the office gym in 30.. gulp...

Well, it's been a week now, but I was back in Minneapolis for Christmas to spend time with my son, his fiancé and her family.

Made THE pilgrimage to Matt's Bar for a Jucy Lucy (The Original and Still the Bestest!), fries and a coupla Grain Belts.

The Koonster couldn't join us. Said he was in Oh Claire!, Wisconsin. Prob'ly suckin' on Cheez Whiz Popsicles an' sucking Schlitz. Too bad – I was going to take on his crawl space as a good will gesture.

Does anyone buy deli meats not pre sliced? Looking to buy a meat slicer and start cutting my own meet but not sure where I would buy it? Looking to make some pastrami dips

chips dips/salsas...

-Bacon wrapped cream cheese jalapenos
-A really good Bison/Poblano Pepper chili I picked up while in the safe house...
-Stuff for chili cheese nachos...
-Cornbread, Mustard Greens

I'm thinking that's it...

Recipe? I love poblanos and use them for crab chowder and ham and potato soup, but they don't have the heat I'd prefer for chili.

Off memory as I have it at home/not in front of me: (I'll update if I forget anything)

2 pounds ground bison
1-2 jalapeno peppers diced and cored
1 large chopped onion (I use white but whatever floats your boat)
2 large poblano chiles diced up
1 cup chicken broth
about 3/4 of 1 bottle of beer (I use Pacifico for this recipe, works GREAT with this)
1 small can of Hunts
chili powder, cumin, salt to personal tastes I suppose, I just ‘feel’ my spices in chili
1-2 cans kidney beans, rinsed and drained
Slash of red wine vinegar and a small spoon of sugar
Splash of Worcestershire
Cajun hot sauce of choice to taste…

Brown meat with onions, peppers, drain some of the fat, add spices… cook for a minute or two before adding Tomato sauce, broth, beer beans and everything else… cook on low for as long as possible. Top with fixings of choice. It’s great stuff.

That's basically my chili recipe except I use half kidney, half pinto. Ten jalepenos. Ground beef or steak depending on how fancy I'm feeling. Corn to cut the spice if the jalepenos are particularly potent.

I do a southwest chili with black beans, hatch green chile and corn too, I may end up blending the two recipes soon,...
