Scored a 4.5 quart stone bean pot on black Friday yesterday. The normal size for a New England bean pot is 2.5 quarts but this thing makes a whole mess o' beans. Molasses, brown sugar, bacon, onions, and mustard going in with two dry pounds of navy beans, soaked overnight and simmered to tender. They'll spend about 3 1/2 hours in the bean pot low and slow. I'll post a picture when done.

I taught myself how to make poached eggs today. So slightly overdone poached eggs, English muffin and Mornay sauce. I was too chickenshit to try Hollandaise the same day.

I know that feeling all too well. I only ever got good at them because I worked with a chef who made me make all the base sauces every day for a few months for the kitchens daily prep. Bouillabaisse is my fav but it was always difficult for me.

Yeah my brief sojourn into back of house life taught me a lot. I didn't get to learn everything or even as much as I wanted to learn. However I learned how little I knew and am trying to improve my feeble knowledge.

You can always try the cheater hollandaise in a blender... i do it when i have people crash and make breakfast in the morning...the irish flu prevents the traditional double boiler.

use your normal set up of ingredients and throw in a blender...then drizzle in melted butter in while the blender is running. nearly foolproof.

i prefer traditional method but when in a jam...

While I was in the Pacific Northwest I had some wild boar sausage. I love boar, one of my favorite meats (along with Duck).

Boar is great. It's a damn shame I never forced myself to get cinghiale in Italy, but I got a boar ragu recently that was to die for.

Last time I was in the PAC Norwest I had some gooey duck and surprisingly it was excellent. I can tell you after being stationed in Japan and going on deployments around the world you really open your mind up when it comes to food!
