Actually I think it might get dicey if we knew for a fact right now that he could never play college football. I believe that Oklahoma pulled an offer from a verbally committed 2013 O-lineman this fall after it was determined that he had to give up football ... but last year they honored an incoming 2012 recruit's scholarship when it was determined AFTER signing day that he would have to give up football.
So bottom line: not totally sure whether we could still give him a scholarship if he suffered a career-ending injury today, before signing day, and we knew it was a career-ending injury, but I'd like to think we could.
But again, that is NOT this case; as far as we know Hunter will come back as strong as ever.
EDIT: Matt Beyer and Laith Harlow are the guys I am referring to:
Oklahoma Sooners out, says recruit Matt Beyer, struck with spinal condition - ESPN
If a player were medically unable to play football after bering verbally offered, the institution can honor it's commitment to him with a non-athletic scholarship. Many players have had there scholarships changed to non-athletic scholarships after incurring career ending injuries. While I cannot recall an injury of this type occurring prior to signing day, I don't think ND would pull the rug out from under a recruit.
