What are your honest thoughts on this...

As always it is tough because so many people have such strong feelings on it.. but IMO that criticism is unwarranted and dumb.

  1. Boone Hall is one of the major tourist sites here. It is busy year round
  2. It is also a currently active farm. I go there to get fresh seasonal vegetables seafood and duck regularly.
  3. It is the site of the annual Taste of Charleston which is a big deal locally. Lots of fun and great food all weekend.
  4. It has a few places like the Cotton Dock where wedding services and parties are held. i have been to several there. Very neat place.
  5. I have also had Dinners Under the Oaks there and other plantations like Middleton Place.
  6. Yes there are slave quarters on the property that have been maintained for cultural history and you see them as soon as drive onto the property. IMO they serve the purpose of reminding us just what we can do to each other if we choose to. They are mainly a tourist attraction along with the plantation grounds. If you arent from here and see one for the first time I can understand it being difficult to rationalize. I also am sympathetic but in reality this is a historical place... there arent KKK/white nationalist meetings being held here. Its a gorgeous piece of property with a massively impactful local history. but it s so well preserved that when you enter it it is like stepping back in time.
  7. So, IMO if you are going to film a Top Chef episode in Mount Pleasant, Boone Hall is absolutely at the top of the list due to its history and current use as a working farm and place to obtain fresh, local, seasonal veggies and fruit.
All in all Colichio hit it on the head. The people giving him crap dont know what they are talking about.

Well... busted my butt at work this week so I am having a few drinks and decided to make homemade fried chicken and waffles. I made a bourbon and brown sugar butter this past weekend. Just got done grilling peaches too....Its going to take a while to make but going to be worth it.

Not possible. Spread your left over in a flat baking pan, cover with wrap and chill in the fridge until solid.

You can then take them out later, cut them up, and make cakes with it. Batter and fry, pan sear, etc...

Apparently I confused having too much with making too much. I drank a bit too much apparently... lol

RE: Chicken and Waffles... OMG. It was like 11 pm and all that stuff was coming off of cooking... my wife woke up from the aroma and and had some with me then went back to bed. Haha.

Do you have an appliance or do you do it stove top?

Gas stove with four eyes and a central grill. Cast iron pan for frying. Cast iron plate for waffles.



This is similar to what I have. Its my wife's great grandmothers.

Last night I simmered some brats in beer and then finished them on the grill. Got a gas grill for the first time. I love my old Weber charcoal grill but with 3 (soon to be 4) children, time is important to me and gas grills are just so much easier.

Cooked my first prime rib roast over the weekend. I felt lots of pressure cooking $150 worth of meat.

Tonight, chicken in a balsamic reduction with mushrooms and tomatoes with some wild rice.

Anyone want to share a legit pizza crust recipe. Sauce as well. I prefer a thin crust, firm enough to hold shape but flexible enough to fold.

For Christmas tho I'm pretty amped... planning:

-Smoked Prime Rib
-Balsamic Brussels Sprouts w bacon
-Garlic Mashed Potatoes

Gonna be epic.

Just finished up a 5 lb bone in prime rib in the oven. Coated it with butter, brown sugar, garlic, salt and pepper and rosemary and put it in a 500 degree oven for 25 minutes. Turned the oven off and let it sit for 1 hour and 45 min. Came out a perfect Rare. Took the drippings and made an Au Jus. I feel really good right now.

I dont know if I can answer your question. I can make my own dough but it is a ton of effort. I tend to buy pre made fresh dough at Publix and start from there.

As far as tomato sauce, i use whole peeled plum tomoates ( i crush and smash with my hands), diced roma tomatoes, onions, tomato paste, sugar, water, red wine, garlic and italian seasonings. Simmer for a few hours, and reduce until the taste is where i want. You can balance with sugar and red wine vinegar as needed.

How did you do the lamb?
Seasoned with salt, pepper, light garlic, rosemary, a small amount of oregano, and browned both sides then baked for about 10 minutes. It came out medium.

Its really a unique and wonderful place. I would pit the culinary traditions and food/ restaurant quality against many places in the country.

I marinated a porktenderloin in herb infused oil, balsamic vinaigrette and spices and cooked it in a slow cooker with garlic and onions. Cooked basmati rice in a broth I made with chicken bouillon, oriental chilli garlic seasoning and chilli powder and I made Pan fried brussel sprouts with bacon. Was delicious.

My wife made the best layered dip ever... don't know the ins n outs but guac, sour cream, beans, pick, cheese... whatever she did worked perfectly.
