Christmas night, the wife and I have a fire in the fireplace and open a bottle of good wine. Then our tradition is to do it on the floor by the Christmas tree. What can I say? I'm a traditionalist!

I'm cooking Thanksgiving dinner for the first time (the bulk of it, I always cook something) this year... Here is the menu:
-Turkey (Brining it in water, brown sugar, cranberry and spices for a day prior, then flash cooking)
-Balsamic Blackened Brussel Spouts w/ Shallots and Potatoes.
- Homemade Mashed Potatoes
-Corn (Just high quality canned corn, drained and in a dish for this one)
-Pumpkin Pie from scratch (The Sugar Pumpkin is from my garden)
-Stuffing (Basic homemade recipe my family has used for years… very good)
-Salt Pork Collard Greens
-Hard apple cider in the crock pot
-Homemade cranberry sauce
-Cornbread (though this will be boxed)
Family is bringing Apple Pie, Green Bean Casserole, and Waldorf Salad…
-Even though this year is with my family I am also getting Filipino Lechon (their version of roasted pig) from the local Filipino market… very good stuff. It'll bring the wife's tradition in and we all like this much more than American style Ham.
I’m really looking forward to it, I am a big cook to begin with and have made every one of the above except for the turkey by themselves and I am confident I can pump all that out without major hassle.

I'm actually debating bringing adobo to the table also, or seeing if my wife can fry up some lumpia, (though I doubt we'll have room for that)... but we are on the edge of food overkill as it is, and Lechon most fits the American holidy eats out of the three... anyway, filipino food is BOMB
