Wife bought some ST. Louis style pork ribs so I smoked them this weekend. Used a little mustard for the binder then the rub. About an hour before being done I put some brown sugar on them. I've never been that big of a fan of these, but they turned out better than I imagined.

How do you make your picadillo? I've always done a more Cuban-style, but my wife does not prefer it.
Beef chorizo (love Peyton’s and do two link for this), and a pound of ground beef,… cubed potatoes, diced green chile (a whole 13oz tub of it), garlic, oregano, cumin, knorr tomato bouillon, chimayo chile powder, a packet of Goya sazon, salt pepper and water. I add tomato paste if needed but it usually cooks down. I’ve never measured this one out and just do it all to taste,… I toss in fresh pico at the end too,… it’s fantastic.

However, brah, when did you get married?? This has to be a recent thing no??

Ah yeah that sounds exactly the way she grew up with it, minus the chorizo. Kinda crazy to me what becomes so "standard" in some places that other variations are seen as weird and unwelcome.

And yeah fairly recently, kind of a whirlwind sort of thing as we only had a 10 month engagement. Luckily I have convinced her that I missed too many ND games last fall due to wedding prep so I cannot miss any this year.

@Acamp I know you moved away from SoCal but I'm heading to LA in September for a few days and want to get some good Mexican food while I'm there. Any local spots you can recommend (or advise me to stay away from)?

Where??? Los Angeles Los Angeles or the greater area (which is gigantic)?? I can def give you some specific locales depending on where you’ll be but a general rule is stay away from chain or fancy joints and look for the hole in the walls that look like they are hanging on to a passing food inspection grade by a thread. If in LA itself, Korean town is a fantastic food borough all round, a little of everything done well

I bought some dandelion greens and ate them raw. IT was a strong balance to a super oily meat calzone.

Ok give me a lil time here bc I checked my go tos (mine and with my boys) and all of them in that area closed or changed ownership since I’ve moved,… BUT trust me, I’ll give you a can’t fail list before you get out there,…

The chile renello burrito from La Azteca Tortilleria (third link from bottom) looks like my jam,.. and those tacos from that last street vender look like my wedding reception in the best possible way lol

If you go to Korea town ( you’re wasting a trip to la without eating in koera town) here’s a spot that looks good and unless I’m mistaken it took the building of one of my fav spots from college


And lastly here’s a spot I’ve been to that’s unique and worth trying, it’s a Oaxaca spot if I remember right:

After church tomorrow I’m making chile Colorado with homemade Mexican rice, pico (that’s already made and it’s spicy as shit lol) and roasted green chiles,… can’t wait

Went to COSTCO yesterday-a first. Holy shit, the meat section is the best. Bought a ribeye roast and sliced off 7 thick-ass steaks. Had one last night with a caesar salad, rosemary bread, lobster mac-n-cheese, Brussels sprouts cooked in butter and diced bacon. 10/10, would recommend.

We buy most of our meat at CostCo. It's hard to beat considering what you otherwise get at Publix.

Sometimes I drive an hour to this little butcher shop in the middle of nowhere to get good meat.

Butcher shops are frigging difficult to find. All the big stores have pushed them to the side, although a good butcher shop, IMO, would be golden just about anywhere in a medium- to large city.

That makes me think... Yeah there were only a couple of butcher shops back in Cali I could think of... here in Texas? They are all over the place; I have like six just in my area of town... blessed.

I just made a big batch of beef stock and have no idea what to do with it besides throw a few quarts in the freezer. Do any of y'all have any go-to uses for homemade stock besides French onion soup?

Also what is everyone making for Sunday? My wife has me convinced to make a big pot of pozole rojo

My wife has declared it's going to be an "app" day where we make multiple dips, treats for the kids, etc. This is contrary to my usual approach of focusing on one big item. The issue I'm having is that it is brutally hot here and buffalo chicken dip and foods like it don't sound as appealing. Tomorrow I'll be smoking chicken, ribs and leg of lamb for my family, my parents and my sister's family so we may continue grazing on that through Sunday.
