hell ya... the food is no contest...
Mexican Carne Asada>>> Texas Brisket by MILES!!!! (Brisket is so damn overrated to me... it's lacking this thing I like to call flavor)

Chinese food>>> Cajun (Not hating on Cajun here...just love Chinese... I think there is one Chinese guy in Texas... and his name is Juan)
Calis Spicy flame grilled BBQ at worst matches Texas smoked BBQ (which is overrated imo)
that will be by far the hardest transition... best food in the contry is right here in so cal man. AND there is so much to choose from... But the one thing that will help me is I like to cook and am pretty damn good at it... I have mastered American and Mexican food and am good enough at Chinese to hold me over...
thing about InNOut... I'll miss it but there is a Texas imitation that comes somewhat close called "whataburger"... I swear they bit off INO's recipe, it's a clear attmept at the same thing burger wise... i and its close, the meat is just a tad better here.
Woah there kitty. Texas is King of Carne Asada and Mexican food. And you can get a full meal for 5 bucks that would cost you 15 in Cali. Cali uses weird spices. Texas brisket over Cali over-priced tri-tip any day. For Christ sake, tri tip is the bad part of the cow, and it sells for 6 bucks a pound here in Cali. You can get TBones and Porterhouse for less than that in Texas. You probably have not been to enough BBQ or steak houses in Texas. No comparison. New Mexico prides themselves on their own brand of spices and New Mexican food.
As far as cost of living, you can buy the same sized house in Texas for 1/3 the price you would pay in Cali. I prefer Austin and San Antonio over Dallas/Ft. Worth or Houston. Every big town in Texas has its own personality, all very different. El Paso/Ft. Bliss/Juarez has its own uniqueness. Odd that El Paso is supposedly either the number 1 or 2 safest cities in the country with Juarez right next door. I guess it is the military presence or something, but my impression of El Pasoans is they are surely friendly and get along seamlessly with their Juarez neighbors. Almost like one town split by the river. I never saw the criminal element in Juarez, but then, I stuck to the safe tourist area.
As far as burgers in Texas, you are jumping into burger heaven. Whataburger is good. It started in Corpus Christi and spread out. Good fries, great onion rings. Trust me, you cannot go wrong with Fuddruckers. Period. Fuddruckers. They bake the bread right in front of you and your meal is served within minutes. Any size beef you want. All the fixins at your gluttonous pleasure for the taking, laid out right in front of you.
I am so damn hungry right now...
