Anyone else ever had Wing Daddy??? It’s like a Texas ( I think) Wing Stop,.... but much better imo. Their Cilantro Lime wings are amazing. That’s my plan for Thursday as I’m alone this week. Wife and kids visiting fam in East Texas and I just got promoted so couldn’t get away. Mother in law brought by bomb tamales today or else I’d have done Wing Daddy tonight.

I need to drop my A1c, so I switched to a (mostly) keto diet. As a result, my testosterone has really increased. Has anyone else noticed this when they tried keto?

I've never been a fan of low carb diets. Everyone I know that tried one gained the weight back pretty quickly after going off the diet. I suppose it's because you starved yourself of carbs and the body wants to store the carbs once you start eating them again.

I dropped 30lbs, by just cutting out almost all sugar (drinks, cookies, cakes, etc.). I still eat other carbs (bread, pasta, pizza, etc.).

I can't speak to the testosterone, but I have a ton more energy just by dropping the weight. Good luck

Yeah, this is just the jumpstart. I'll eventually throttle-down an reincorporate some good carbs, but I'm currently running baseline experiments on what certain meals and dishes do to my blood glucose. Unfortunately, burgers, fries, and chocolate cookies don't appear to be on my good list. Fried chicken is not so bad, though.

Bronzini's was pretty good. Midwest tailored NY style pizza is what I would call it. best pizza in Indy area though is Jockamo's and it isnt even close.

Pizza King's are all hit and miss. Been to probably about 10-15 different ones and I'd say only 3 are legit good on a regular basis.

Think I'm making pozole rojo again tomorrow to get rid of some leftover chili paste. The only thing is this chili paste is already a little old lol and if it's already turned (passed the sniff and taste test), then I'm in for a doozy of a night.

Perhaps some Docs and/or nutritionists can weigh in on this. Grass fed beef and/or wild game. I recently read that grass fed beef has about 30% of the cholesterol and sugars of grain fed beef. I read that corn fed beef was the worst for diabetics. Don't know if that is true but the explanation made sense. I'm not a scientist.

I usually butcher a couple Angus steers a year to share with family and friends. All grass fed. Very good taste but the fat is definitely "different. No doubt, it can be a bit tougher. When I am hosting, I usually go to Costco and get the AAA or Prime.

With my recent diabetes diagnosis I'm living on wild game and free-range beef. My numbers have dropped significantly. I was never a big carb or sugar guy. FWIW.

Should have added... heading to the ranch tomorrow. Opening rifle day is this Sunday. Currently an empty nester. My wife and I have tags for Bull elk, cow elk, 2 whitetail (either sex) and an antlered mule deer. Lots of snow right now and the SIL is putting the tracks on the side by side. Don't think I will be back in the city until December. Set up a wall tent last year on an 800 acre block. Can't wait!!

Made my yearly batch of hot sauce today. Wife can’t go in the kitchen, the fumes are making her cough. Grew cayenne, hungarian and an assortment of banana peppers this year. Also had some seeds for this crazy Chinese pepper described as “fruity with mild heat.” Harvested all the peppers last week and have been fermenting them with garlic, onion in a salt/sugar brine.
Anyhow, the Chinese peppers are the hottest thing I’ve ever come across. I put the fermented peppers and some of the juice in a large pot, boiled it for a bit and set to with an immersion blender. The steam about melted my eyes... my wife has left the house. This stuff makes your lips burn just smelling it. I took some over to a friends house. He loves the heat.

What are y'all doing for the game on Saturday? I think I'll be making a fauxlognese sauce, possibly even the night before. I've been jonesing for some pasta for a while and Saturday seems like the perfect time to eat a big bowl of pasta.

Fauxlognese because I probably won't be adding the necessary ingredients of dairy, the full soffritto, and will be using only sausage instead of a mix of ground meats. Plus I might make it spicy too.

I have no idea what sorta drinks I'll be having during the game though.

Wife wanted some bagels and cream cheese so I picked some up at the store. Noticed they had a jalapeno cream cheese and got a tub. Toasted bagel with jalapeno cream cheese is pretty damn good!

Made some chicken and sausage gumbo today so I could keep prep a bit for the next couple days. Pretty dang good, though next time I'll hopefully be able to make a dark roux

There’s a Chinese joint called Noodles and Dumplings here in EP,... no one should walk this earth and die without having tried this once,... legit, real, authentic Chinese in middle America... who knew such things were possible???

On the way home from vacation, the wife and I made a detour to intentionally stop at this little joint in Gulf Shores called The Steamer. Ordered the Little Lagoon Steamer tray. Huge offering of Crab Legs, Royal Reds, Shrimp, Oysters, Clams, Corn on the Cob, New Potatoes and Sausage. We could only finish about half. Packed the rest in the cooler and had it the next day. Highly recommend it if you're in the area.

Let me brag on myself a bit,... my wife’s family runs a church group that builds homes across the border for poor Mexican families in Juarez. They recruit volunteers from all over the country and from more affluent areas of Mexico and build homes like twice a year. Every time they do they also ask for people to cook for the volunteers, which I’ve done numerous times with tacos, lasagna, jambalaya etc,... a couple weeks ago I made a huge pot of albondigas and got the reviews back today. According to the Mexican lady that helps run the program every single volunteer, Mexican and American, said it was the best albondigas they’ve ever had... everyone wants my contact info to get the recipe,... I take pride in my cooking and that made me feel pretty good.
