Found some tri tip. Unfortunately thinking that I might have wasted it for some meh tacos. Dang. Luckily it was somewhat cheap

We got a Santa Maria in the bag from Costco and made it the other day. It's good and 3lbs was $17 I think.

Having the leftovers, some Roadrunner eggs & grilled tortillas this morning for brunch

Man that sucks zel, it wasn’t my chimichurri tacos recipe was it??

Santa Maria is the way to go generally, ( though I go garlic and red wine with chimichurri for tacos)... love tri tip. Smoke it for a short while, maybe 90 minutes,... comes out fantastic.

Nah, it was a random recipe I found online. I think they were using a significantly smaller piece than me. Overall it was fine, but a little too tough, super flavorful though.

Yeah tri tip needs less cooking time than just about any other cut of comparable size,... easy to overcook if you cook it like you would other cuts.

Made cajun tilapia with roasted potatoes from Hello Fresh last night. Made a coating with paprika and mayo than dipped in panko before cooking in olive oil. Pretty good.

Chicken patties, pepper jack cheese, sauteed onions peppers and tomatoes, Mexi ranch sauce, lettuce, then fried tortillas for bun

I don’t know how prevalent they are nationally, but in both Cali and Texas most good gastro pubs have ‘mexican’ burgers of some sort and they’re usually my go to. Something like: roasted jalapeño or Anaheim, crispy onions, chipotle ranch, pepper jack, avocado slices or guac. Very good stuff. Oggis brew house, a chain of breweries in Cali has one called the matador that’s among of fav chain burgers anywhere. It comes either as a normal burger or grilled chicken sandwich, both very good.

Making pernil for the 1st time today. Sous Vide style @ 165° for 24 hours then a 30-minute oven roast @ 400° to finish. Adobo & sazon dry rub in a sofrito marinade. Going boom or bust with this one lol

Here’s something to try if you’re gonna do a regular quesadilla. Dice a large bunch of cilantro, some onion and some garlic. Throw in a pan with hot olive oil, season with some cayenne pepper, salt and pepper. Sauté that. Remove from heat and use as filling for quesadillas.

I had been wanting to do a larger pork roast and came across pernil. Never had it before, but seemed like it might be good. I'm my harshest critic with my food (who here isn't?) and I'm telling you, I would eat this 8 days a week!

Last night I made some bulgogi and Korean coleslaw added it to white rice and topped it all with diced green onion.... really good

Though everyone’s version is different, I’ve had some with fish sauce etc I didn’t really care for. If he makes it with a lot of sauce make sure to pour it all over some white rice,... yum

He was gonna do pork belly then cheaped out with chicken thighs after I told him our HEB only had really pricey belly

We do all three, just chicken, just pork and a mix depending.

I’ll be curious to know how he does it.

We do: soy sauce, vinegar 50/50 depending on how much you are making, a bit of sherry also depending, sliced onion, hot peppers and bay leaf. And slow boil the meat in it all. And we always make sure to have enough to pour over our rice. It’s not better or worse but it’s how my wife’s family does theirs. I know some who to VERY little sauce,...

Sorry I’m of no use here,... I make home made ceviche but never anything with escabeche...
