We have a little football in our lives but we still need to still take it in moderation to soften the blow after spring.

Any cooks on board? Wondering what your favorite breakfast, lunch or dinner recipes are. I am not a sweets guy so could care less for desserts. However, (sigh), if you feel like sharing it you can.


3 eggs, 5 oz filet, green red and banana peppers, jalapenos, mozzarella and shredded jack cheese, salsa, oregano, cayenne pepper, siracha, chicken seasoning and some celery. All mixed into a scramble and thrown together as a breakfast burrito.

Not for everyone but that's mine.

I normally don't cook because my wife loves to experiment. They other day, though, I made the best chicken parmesan I have ever tasted in my life. I never eat left overs but I made so much I ate it for three days straight.

The normal receipt ask for chicken breast but I used chicken tender meat.

In total there was probably 10 pieces of chicken.

First I dipped the chicken in a scrambled egg, then coated it with seasoned bread crumbs that come in a can.

Then I set up a pan with about an inch of Olive Oil and fried each side of the chicken until it was brown. Make sure it is not too well done. It still has to bake.

After all the chicken was done I got a pan out and put the chicken in, then put a 16oz can of tomato sauce on top of the chicken. The last thing to add is shredded parmesan cheese. I used a whole bag ( I like it cheesy)

Once that is complete, bake it for 25-30 minutes at 350 degrees.

Tasted great to me. You can add your own flavor to the tomato sauce and the seasoned bread crumbs.

The other thing I love to make is extremely spicy salsa.

The easy thing I do is get mixed tomatos (Rotel) and blend it with habenero sauce in a food processor.

Or you could get raw tomato's and habenero' s and boil them until they get soft. Then peal the skin off and blend them. Add your own flavor (salt, pepper, ect)

My wife gives me a day or two in the kitchen and then tells me to beat it (hehe). I cook like a man should. Little this, little that, beer here, "Babe! I got caught double fisting my beers again and can't finish the cooking. Will you poor my Jameson and finish my waffle when it dings? Don't forget the siracha and oatmeal on top!"

Simplicity in the kitchen is my thing.

French Toast
Take a couple eggs (or more, depending how much you plan on making remember you can always use the leftover to make scrambled eggs) and beat in a bowl. Add a dab of milk (ever since we switched to Skim, my French Toast hasn't been as good so I think 2% is best). Dip bread (do not soak) of your choice in the eggs and throw on the stove. Can add any delicious topping (fruit, powder sugar, cinnamon sugar, etc.) after cooked.

Beau's Chicken
Get yourself some frozen Tyson chicken breasts. Throw on the stove. Add desired amount of Italian dressing (I use a pretty good amount) to the pan. Slice up some green, yellow, and red peppers and add to the pan. Cook until chicken is done and enjoy. Goes great with some instant white rice.

Beau's Chicken Nachos
Slice up some chicken breast (canned chicken may even do) and throw it on the stove. Slice or dice up some peppers and add those to the pan. (Can add diced onions or tomato if desired.) With the cheese, I like to go with Pepperjack. (I used the cheese cubes.) Add the cheese and some milk to the pan and make sure to stir everything frequently. Once the cheese is melted and the chicken thoroughly cooked, put on top of your desired chips and enjoy!

All these meals are REALLY good and clearly simple.

Pizza at home:

-Make your own pizza dough or use a bread maker to make the dough
-Pre-cook the dough on a pizza stone, just to the point where it starts to develop a light crust
-pull out (not too early-or too late-Hahaha) and lay out the toppings: use a base of pesto sauce, layer of thinly sliced tomatoes, garlic to taste (in my house, that's like 5-7 cloves, minced), mozzarella cheese.
-Throw back in the oven until done.

I also like to add ham, red onion, sometimes chicken, chorizo.



This pizza is really good and I've never had complaints-always rave reviews.

I do enjoy cooking....

I usually make these sans the pomegranate molasses, but I would imagine that would only make it that much more amazing.

MIDDLE EASTERN CHICKEN BURGERS:

Ingredients
Burgers:

2 teaspoons extra-virgin olive oil
1 large onion, finely chopped
1 teaspoon ground cinnamon
1 teaspoon ground coriander
1/4 teaspoon red pepper flakes
1 1/2 teaspoons kosher salt
Freshly ground black pepper
2 cloves garlic, minced
1/4 cup chopped flat-leaf parsley
1 pound ground lean chicken
1/4 cup plain yogurt
3 tablespoons pomegranate molasses, for brushing

Fixings:

4 whole wheat buns, toasted
1 tomato, thinly sliced
1 English cucumber, thinly sliced
1 small red onion, sliced
Lettuce

Heat the olive oil in a skillet, add the onion, cinnamon, coriander, pepper flakes, and season with salt and pepper. Cook until onions are tender, about 5 minutes. Stir in the garlic and parsley and cook until garlic is fragrant, about 1 more minute. Transfer to a large bowl and let cool slightly. Stir in the chicken and yogurt until the onion are evenly mixed. Season with salt and pepper. Shape into 4 1/2-inch thick patties.

Cook in a nonstick skillet over medium heat until browned and cooked through, about 5 minutes on each side, or until an instant-read thermometer inserted into the sides of the burgers registers between 165 and 170 degrees F. Brush burgers with the pomegranate molasses and set aside to rest for 5 minutes. Serve on toasted buns with fixings.

i have a couple of fool proof recipes. my chili will kick any cold tailgate in the a$$. my italian beef is super simple unbelievable. burgers are my favorite.

heres a couple from me guys. Bon Appetite!

Hawaiian Sliders--Manti Mini's--if you will
1 lbs ground chuck
2-3 tsps sesame seeds
1/4 cup low sodium soy sauce
chopped green onion--to taste 1/4 cup or less is what i got with
1 tsps ginger
Mix all the above in bowl. incorporate well. then form into slider patties--e.g. about meatball sized balls formed into patties--
grill em up!
also--grill up slices of pineapple then quarter
i place a slider and quarter of a grilled pineapple on--heres the kicker--
Hawaiian Sweet Rolls!
a decent condiment is a a quick and easy sweet and sour sauce
couple teaspoons of each:
ketchup
yellow mustard
soy sauce
brown sugar

i serve these little guys with sweet potato fries. BOOM!

italian beef sandwiches
do these the day before you want to eat them:

2-3 pound roast of your or your butchers suggestions for sandwiches.

place meat in crockpot fat side up--if there is one--
to crockpot add:
2 dry packets of italian salad dressing
1 jar of sliced peppercccini or banana peppers including the juice
1 can of beer
cook overnight--you can ladle juice over meat a few times, but not all that necessary.
if necessary: separate meat with two forks
Get some really good italian bread--fresh loaves work best--cut in to desired sandwich size.
put meat on bread and place slice of provolone
throw under broiler on high until cheese is brown and bubbly--about a minute or two
ladle out some juice in dipping cup as au jus
enjoy!

a real good crockpot chili for tailgating in colder weather
This is the Brian Kelly USF Red Face Meltdown Chili

2 lbs ground chuck
1 lbs italian sausage--id use hot
3 (15 oz) cans chili beans, drained
1 (15 oz) can chili beans HOT
2 (28 oz) cans diced tomoatoes with juice
1 (6 oz) can tomato paste
1 large yellow onion chopped
3 stalks celery chopped
1 green pepper seeded and chopped
1 red bell pepper seeded and chopped
2 green chili peppers seeded and chopped
1 tablespoon bacon bits
4 cubes beef bullion cubes
1/2 cup beer--go ahead and use a full cup...i know you want to!
1/4 cup chili powder
1 tablespoon Worcestershire sauce
1 tablespoon minced garlic
1 tablespoon dried oregano
2 teaspoons ground cumin
2 teaspoons hot pepper sauce e.g. tabasco or your favorite
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon white sugar
1 (10.5 oz) bag of corn chips e.g. Fritos for topping
1 (8 oz) bag shredded cheddar cheese (pepper jack to kick it up) as a topping
dolup of sour cream as topping

i love bread bowls, but this works well in cups or styrofoam bowls

Brown meat in skillet--drain grease
In big stock pot add all other ingredients then add browned meat--stir
simmer
check after 2 hours stirring occasionally
taste--adjust seasonings--if necessary
cook another hour or 2
remove from heat and refrigerate
crock pot day of at Tailgate and enjoy!

My grandmother use to mix in BAILEYS with the egg bath for "adult" french toast. It was awesome!

New Mexico Green Chile enchilada casserole.

1lb or more roasted and diced Hatch Green Chile
1-3 minced Serrano peppers.
2-3 cloves minced garlic
1 large diced white onion
Salt and freshly ground pepper
1.5 pounds cooked diced chicken breast or roasted turkey breast. (My preferred method is to brine, boil in chicken stock then sear the chicken)
1 mega can Cream of Chicken soup
Milk
36 Corn tortillas
2-2.5 cups shredded cheese. (I prefer sharp cheddar and Pepper Jack)
Vegetable oil
2 tbsp butter.
Large Pot
large Frying pan.
9x13 baking pan
Paper towels.



Cooking
Over medium heat melt butter in pot. Add half the onion, garlic and serranos and saute till onions are opaque. Add a little pepper and salt to season. Add your roasted chile. Saute. Add the entire can of soup and one can full of milk. Mix thoroughly and bring to a lite simmer. Lower the heat to medium low, add diced chicken and bring back up to simmer. Taste and season with salt and pepper if necessary. Simmer sauce base for 20-25 minutes be sure to stir every 3-4 minutes. Whilst enchilada sauce is simmering. Heat oil in frying pan. Fry corn tortillas one at a time just until lightly brown adding and reheating oil as necessary. Set tortillas aside on paper towels to drain.

Assembly
Add one and a half ladles of sauce base to bottom of baking dish. Put one layer of your prepared tortillas over the sauce base sprinkle with reserved onions and cheese. Cover first layer with sauce. Repeat layering with remaining tortillas, sauce, cheese and onions, finishing with sauce base and cheese as the top layer. (Any remaining ingredients roll up into little tacos and enjoy. They are awesome as well. )


Baking

Heat oven to 350. Cover casserole with tinfoil and bake covered for 30 minutes. Uncover and bake and additional 15 minutes till the top browns and cheese melts. Let cool slightly. Cut your self a hunk and enjoy with copious amounts of Dos Equis Amber or Negra Modelo con limas!

16 oz macaroni noodles
8 oz Cheddar Cheese, shredded
16 oz Velveeta, Cubed
1 can Cheddar Cheese Soup
8oz sour cream
4 TBS butter
1 C milk
1 tsp black pepper
1 tsp french's mustard
1 TBS minced onion

Cook noodles to desired tenderness, put in crock pot with everything else, mix thoroughly, cook in crock pot on HIGH for 3 hours, stirring occasionally. Then Enjoy. I only make this for very important tailgates, thanksgiving, and Easter, but it's the BOMB diggity.

This isn't a recipe, but if you like steak, soak them for 20 minutes in budweiser then empty that, and marinate them with A1 sauce, rock salt, Peppercorns, and Lawry's. The budweiser tenderizes the meat and the steaks will melt in your mouth like butter.

Zuppa Toscana!!!

This soup is the CHRONIC!!!!

Ingredients:
1 pound bulk sweet Italian sausage (the best is at Kingma's!)
1 large yellow onion, chopped
2 large russet potatoes sliced in half, then cut in 1/4 inch slices
2 (14 oz) cans chicken broth
1 quart (4 cups) water
2 cloves garlic, minced (or 1/4 teaspoon garlic powder)
1/3 cup Real Bacon Pieces (better than Bits)
Salt & pepper to taste (I used just less than 3/4 teaspoon salt & less than
1/2 teaspoon pepper)
2 cups kale, chopped
1 cup heavy whipping cream

Directions:
1. Brown the sausage in a frying pan and drain.

2. Place the onion, potatoes, chicken broth, water and garlic in a large
pot, and cook on
medium heat until the potatoes are cooked through. Add the sausage, Bacon
Pieces, salt &
pepper, and simmer another 10 minutes. Turn the heat to low and add the
kale and
whipping cream. Heat through and serve.

Serves 8

kissme--im doing this maybe tonight!! this looks awesome! my only change--im going to switch up the 8 oz of shredded cheddar with an 8 oz brick of philly cream cheese. i'll let you know!

my italian style mac n cheese is as follows:
boil 1 lbs macaroni (i say macaroni meaning any pasta--your choice--i like medium sized shells)
**you want it just before al denti, as it will finish later**
drain-saving one cup of the pasta water
pour macaroni in mixing bowl
add 2 cans cream of mushroom soup
add 2 cans of cheddar cheese soup
fill two cans with milk, add pasta water
pinch of pepper
mix
add to cassarole dish
top with italian bread crumbs
cover with foil and bake 350 for about half hour until bubbly and browned at edges.

Umphreak, if you do that, use the cooking creme by Philly instead of just regular cream cheese. It'll cook better. I've used it in other dishes.

my super bowl queso dip i use
1 brick velveeta cheese cubes
1 brick philly cream cheese
2 cans hormel chili no beans--can use the one with tabasco for heat if you wish
throw in crockpot and heat
serve with tostitos. BOOM

Tailgater's Buffalo Chicken Dip:

2 cans shredded chicken breast
1 C Frank's Red Hot brand Buffalo Sauce
8oz cream cheese
2 C shredded Cheddar Cheese
1/2 C Ranch Dressing (Optional if you don't like a lot of heat you can tone it down with this)
Cook in crock pot till melted. Serve with Tortilla chips, Garlic toast, Celery, anything you want.

Chicken Enchiladas that I served to Louis Nix:

4 chicken breasts shredded (place chicken breasts in crock pot cover with chicken broth cook on high 4 hrs, or until shredded)
1 medium chopped onion
1 can black beans, drained
1 can Rotel with green chiles, drained
2 C brown or white rice (Not minute, and whatever taste you prefer)
1 C white cheddar
Flour Tortillas
1 Big can of Old El Paso Enchilada Sauce
1/2 cup lime juice
Fresh Cilantro

Cook your rice, when it has about 15 minutes left add lime juice and cilantro. Stir.
Put all ingredients together and mix up, spoon into tortillas and roll them up, cover with enchilada sauce, and cheddar cheese if you want, bake on 350 for about 15-20 minutes. This makes a lot, so make it for football parties, or holidays, or you can scale it down a tad and use 2 breast to shred and 1 C rice.

Slice a medium white onion and put it on the bottom of a large sauce pan. Add your brats on top of the onion. Cover in a mixture of (enough to submerge the brats, ususally a beer and almost a bottle) your favorite barbeque sauce, and a light beer. Bring to a boil, then reduce heat and simmer for an hour. Let brats drain, and finish on the grill. Serve on your favorite buns, w/ your favorite mustard, and chopped onion. Deelish.

Here's a good shut up the kids snack, althoug its good for adults. English muffin mini pizza. Put some tomato sauce and parm cheese on top ofEnglish muffinsand put them in toaster oven for a few minutes. Add some oregano or other spice to taste. Quick and easy for when you have deal with a bunch of kids, or any other annoying house guests.

I wouldn't call this a recipe, but it was a concoction I came up with one night, possibly an "NDOM Moment."

Grab an onion or ten. (White, yellow, red or Vidalia, whatever is on hand – now that I mention it, Sweet Vidalia could be an excellent choice.)

Peel the onion(s), Slice off the top and most of the root end leaving a flat and stable "bottom."
Slice the onion(s) from the top to close to the bottom (a little more than half way – enough to open it up a bit and not too much to have it fall apart) in eighths.
Drizzle with olive oil.
Press horseradish into the gaps in the onion.
Sprinkle with Tobasco (or your preferred hot sauce)
Press in some minced garlic.
Stud with some jalepeño pepper slices (the ones in a can will do)
Drizzle with a little more olive oil.
Top with a bit of cheese (whatever you have on hand – when in the throes of The Munchies one can't be picky) though cream cheese was fine by me.
Bake for a while in a 400 degree oven for however long it takes for your hunger to overtake your patience ... or the cheese melts or begins to brown/burn.



Best served when alone or not within six feet of breathing distance of others who have not partaken.
