Am I the only person who still does a good ole fashioned roasting in the oven, having to baste every 45 minutes to keep it moist? Well that and filling the bottom of the pan with turkey stock. I've been doing that for 8 years and never a dry bird.

Wood? I’ve used mesquite before but I’ve been having been better results with cherry.

Try pecan too. Both work, even together. Pecan goes great with an old fashion.
