Texas BBQ is MUCH better than BBQ you can get in NC. I'll agree and say that brisket isn't my favorite, but real pit BBQ in Texas with ribs, sausage, pork, etc. is second to none.
Nothing better than that vinegar based Q you get from NC. Note I am from Georgia, but my vote goes to the vinegar based.
Wilson says the best thing in the WORLD (and he has been around the world) is vinegar based sandwich with a bit of slaw on top with a few ribs on the side. Holy shit, I'm gonna find some tomorrow. Can't do it today because any realBBQ joint is only open Thursday Friday and Strdy.

Great NC BBQ is sublime. It's fairly straightforward to produce in small quantities--you need a hog, a smoker, some beers, and some friends willing to sit up all night drinking & tending the low, slow fire that's producing the smoke that's actually doing the cooking.
