Its a texture thing. sorry about disliking tofu I didn't know this was an issue so near and dear to your heart.
I wasn't trying to be a d!ck, homie. I was just trying to be funny in an attempt to figure out what it was about tofu you didn't like. Because if it was the taste, then I wanted to clarify that it doesn't have a specific taste.
As Jayhawk mentioned though, it also doesn't always have to have the same texture. There are three types of tofu.
Silken tofu is almost always called for specifically in a recipe, so I won’t talk about it much here, but basically it’s smoother, often used in desserts or spreads, and usually comes in a tetra pack, which makes it a handy type to bring camping or to use for stocking your bomb shelter.
Tub tofu is probably the most common kind you’ll find in the supermarket. It comes in a tub that usually has a bunch of water in it too. Adding to the complexity, it often comes in different densities or firmness levels; typically soft, medium, and extra firm. Even when it’s marked as firm, it’s still pretty soft.
Brick tofu looks like a brick, and instead of being packed in water, it’ll usually be wrapped in plastic and look almost vaccuum packed. This tofu is super-mega-firm, and it’s still easy to break up, but it’s also the easiest to slice or cube without everything falling apart.
So, you can have tofu in a variety of textures as well. For instance, the tofu in the sloppy joe's (I know you still dislike sloppy joes, so this doesn't really help you) is a completely different texture than say... the tofu cut up in stir fry.
Furthermore, there are also other meat substitutes like Tempeh and Seitan (my favorite, great for phillies) that both have their unique textures/tastes.
Mushroom based chicken-substitute patties... well, I have never met someone that could tell the difference between them and real chicken patties.
