Baking/cooking desserts thread

As to not clog up other threads (ahem, PB...), I'm starting a new thread here about the baking/desserts. I know we have a What are you eating/cooking? thread, but I'm making this all about the sweets. Say what you want, I'm the baker in the house.

I'm making the standard Nestle Tollhouse Chocoalte Chip cookies this year. However, I heard the original recipe says to put the dough in the fridge overnight, which the back of the package omits. Apparently this makes a ton of difference.

Also trying Alvin Zhou's 48 hour Toffee and Chocolate Chip cookie recipe also. Same premise. Make the toffee, make the dough, make cookie size balls, put in fridge and wait 48 hours to bake.

Anybody else cooking/baking anything? I know @Irish#1 piped in in Moore's thread:

I have a recipe handed down from my grandmother to my mom that I still make. I call them Christmas brownies (not really brownies)because we only make them at Christmas.
You take a couple of packages of graham crackers and crush them up until their almost fine. Add a can of sweetened condensed milk and semi-sweet morsels and mix. you may need to go with 1 1/2 to 2 cans of the condensed milk. Bake at 325 for about 25 minutes until light golden brown. Let them cool of then roll in powdered sugar. Don't overbake.

I just now am getting into baking really in the last couple years,… I shared my lemon cream pie that everyone loves in the food thread but I make mean pumpkin pies too, grow my own pumpkins and all.

I want to get into cheesecakes but haven’t done so just yet.

This might be a dumb question, what pumpkins work best for pies? My wife grows some pumpkins, but tends to grow ones to put on the porch to look pretty.

I have a recipe for what I call Christmas Brownies because my grandmother and mom only made them at Christmas time, so I've followed the tradition.

1 1/2 packs of graham crackers crushed
1 can of sweetened condensed milk
semi-sweet morsels (add via the eyeball test)

Mix together and bake in a 8x8 or 9x9 glass dish at 325 for about 25-35 minutes (until light golden brown). Let cool, cut them in squares and roll in powdered sugar.

You may need to add a little more sweetened condensed milk when mixing. Given the graham crackers are already golden brown it can be a little tricky. If you over bake they will be too hard.

Sugar pumpkins,… they are the small sized darker orange ones. You can use the regular ones but sugar pumpkins are grown for the purpose.
