Roster management is highly variable to your playstyle. I personally like to run spread option, so on offense especially it's all about speed, speed, speed. Again, build for the way you play, but here's a rough idea of how I like to see a roster breakdown once you've managed the program for a full 5 year roster rotation:

Now of course this is a guideline. Hot recruits change the ebb and flow of your roster and you have to make adjustments, but this is very balanced. Notice the template for your incoming class is the same as your outgoing 5th years.
QB and RB are kept at 4 per position, with the year without one skill alternating with each other. Recruit 1 TE a year, but keep your TE stable at 4. I like to recruit receiving TE's for the position and one monster blocking TE to be position changed to FB, since all the FB's really suck (4TE, 1 FB over 5 year cycle). Redshirt every freshman. Be aggressive in recruiting and get promises, topic discovery and early visits set. You're only going for a class of 14, so pick carefully and go for them balls to the wall. Early hard commitments will come in the first few weeks. Replace a position player with the next feasible of the same position and continue to press along. Athletes are risky early on, but once you have spare time, grab up everyone you scout to be competitive.
Of course all stats are important for their respective positions, but I recruit especially for speed. Being a spread option type I like to recruit:
Speed 86+ Acceleration 85+ Quarterbacks.
Speed 90+ Acceleration 88+ Halfbacks
And most importantly:
Speed 93+ Acceleration 90+ Wide Receivers and ALL DEFENSIVE BACK POSITIONS.
All of this is of course
an ideal.
