We went to the Farmers' Market and got some tomatoes, cukes, Onions, green bell peppers, celery, shallots

Just got back from an upscale Mexican steak house. I got arrachera tacos with rice, Pico and guac,… it was super yummy

it’s officially my weekend and I’m getting in,…

Just made a huge patch of Pico ( my Pico is champion), making some cilantro lime rice in a bit and then around 3:30 I’m putting some white fish and shrimp ceviche together.

Hardcore,… I usually can’t do the early am smokes. I have to ask however, did you give yourself enough time for the pulled pork? I often go well over 12 hours for mine

Generally that's where I am at too. This one is only 7 lbs, so I should have this done and resting in about 9 hours. Its been on since 430 and im already at 190 internal.

Good brotha, third girl was born in March so staying busy.

I cook indirect in the Komodo Joe at about 225, pull at 115 and then crank the temp to 600 and sear to finish.

Made some Sous Vide burgers last night. Seared in the pan after for the nice crust. They were perfect. Added a little thyme in the bag during the water bath.

The Moore thread got me thinking (lol) about regional food,… Moving to ‘The South’ (or at least much closer to it depending on your take) I find I have to be carful ordering tea. I love Southern food and such, a lot, but I freakin hate sweet tea. Get that pancake syrup bullshit away from me and get me a regular tea with lemon!! I’m three plus years into this and still forget to specify ‘unsweet’ tea. I choke every time I accidentally drink that nastiness.
